BBQ Chicken Sandwiches

I was craving BBQ beef sandwiches the other day, but what do you know? I didn’t have any chuck roasts in the freezer. Figures … So anyway, I decided to go with BBQ chicken sandwiches instead! That’s the next best thing, right? Right! … especially when that’s the only kind of meat in your freezer. 🙂

I have made shredded BBQ chicken in the crockpot using two other recipes (Island BBQ Chicken and Zesty Chicken BBQ) and this recipe at least ties for first place. (Honestly, it’s been so long since I made the zesty chicken bbq that I don’t remember enough about it to compare. I’ll have to make it again soon for a taste test … ) This makes a lot of food, and I’m very much looking forward to the leftovers!


BBQ Chicken Sandwiches

1.5 lb. chicken breasts
1/2 onion, diced
1 cup of any combination of ketchup and bbq sauce (mine was split about 50/50)
4 oz. taco sauce
1 tbs. brown sugar
1/2 tbs. dry mustard
1 tbs. vinegar
1 tbs. Worcestershire sauce
1/2 tsp. oregano
1/2 tsp. garlic powder
1/2 tsp. steak sauce

Directions:
Place chicken breasts in the bottom of your crockpot. Add all other ingredients, stirring to combine and covering the chicken as best as possible. Cook on low for 7-8 hours. At end of cook time, shred chicken and mix back into the sauce. Serve on your favorite sandwich buns, and enjoy!

Menu April 2-8

Last week, my grocery store had a great sale, so I did a ton of stocking up. I have never seen our refrigerator and cabinets so packed! That means that my goal for this week is to use as many pantry items as I can. If all goes as planned, my grocery trip for the week will consist of fresh produce, and that’s it! (Well, not including Saturday — my mom is visiting!)

Saturday: Lasagna with garlic bread, crab dip for an appetizer, and Diet Coke Cake for dessert.

Sunday: leftover lasagna; out
Monday: Whatever we can scrounge up
Tuesday: Meatball subs
Wednesday: Out
Thursday:  Meatball subs (again)
Friday: Homemade pizza
